Ingredients
1 Bottle of baby clams (available from our store)
Noodles (enough for 2 servings—approx. 150g)
1 large or 2 medium onions, sliced
250g chopped tomatoes (approximately ½ bowl)
1 medium capsicum, chopped
1 medium carrot, chopped
1 teaspoon chili powder
1 tablespoon ginger-garlic paste
5 tablespoons oil (divided)
Salt (to taste)
Directions
- Prepare the Clams: Open the bottle of baby clams, separating the clams from the stock solution. Set both aside.
- Cook the Noodles: Boil water in a large pot, adding half of the clam stock solution. Add a pinch of salt if desired. Cook the noodles according to the package instructions until they are al dente. Drain, saving the leftover water for soup or another dish.
- Sauté the Vegetables:
Heat 2 tablespoons of oil in a pan. Add the chopped tomatoes and ½ teaspoon of salt. Stir in the ginger-garlic paste and chili powder. Fry until the mixture releases a fragrant aroma and the tomatoes soften.
Once cooked, blend this mixture into a smooth paste and set it aside. - Sauté the Clams:
In the same pan, heat 2 tablespoons of oil. Add the onions and sauté until golden brown.Stir in the baby clams along with the remaining clam stock solution. Let them cook for about 5 minutes. Add the chopped capsicum and carrot, and cook until tender.If needed, add 1 more tablespoon of oil to ensure everything fries evenly. - Mix It All Together:
Stir the prepared tomato paste into the pan, ensuring the mixture is well-combined. Adjust salt to taste.
Finally, mix the cooked noodles with the clam-vegetable gravy until the noodles are fully coated.
Notes
- Tips:
For extra flavor, sprinkle fresh herbs like parsley or cilantro before serving.
Serve with a side of soup made from the remaining noodle water and clam stock.
